Sour dough
Sour dough is a mixture of water and flour that is allowed to mature by itself for a certain period of time at ambient temperature, during which time the micro-organisms in the flour reproduce and start to ferment to produce really nutritious and flavoursome compounds.
Fermentation
Fermentation (from the Latin "fermentum") describes the conversion in biotechnology of biological material with the help of bacteria, fungi or cell cultures, but also the artificial addition of enzymes (ferments). Natural fermentation
The traditional manufacturing process for sour dough (yeast dough) is very labour-intensive, difficult and greatly dependent upon the environmental conditions, the cleanliness of the working environment and the equipment used. If these are not kept absolutely clean, this can have a negative impact upon the quality of the end product. The baker's experience, ability and manual skill are often not enough to guarantee the consistency and effectiveness of the sour dough, as the biological balance is very sensitive.
To manufacture natural yeast, the automatic fermentation plant FLN is available in four versions with a different capacity depending on the customer's production. Models 300-500 L. Models 80-120 L
Make-up of the fermentation plant
The automatic fermentation plant FLN is made up of: - usable capacity yeast 60 L. (Mod. 80 L.) 100 L. (Mod. 120 L.) 240 L. (Mod. 300 L.) 400 l. (Mod. 500 L.) - housing made from stainless steel AISI 304 - actuator with strippers- Cowles dissolver (Mod. 300 and 500) - Fully automated system for monitoring fermentation cycles with touch screen - temperature sensors and sensors for pH value with high reliability - water pump for temperature regulation (cooling and heating) - access flap with minimum level (mod. 300 and 500) - drain valve (emptying) - Cleaning equipment with manual rose - control board and interfaces with IP65 protection class.
